Deanna's Red Potato Salad

5lbs red potato cut in 1 inch pieces and boiled until soft
1/2 c red wine vinegar
1/2 c olive oil
2 T dijon mustard
3-4 T mayo
1 c red onion finely chopped
1 red pepper finely chopped (opt)
salt and pepper to taste

Mix potatoes, onions, peppers. Mix remaining ingrediants in a small bowl toss with potato mixuture. Add salt and pepper to taste
