Sweet and Sour Chicken

4-6 chicken breasts
1c carrot chunks
8 oz russian dressing
1 can pineapple chunks
8 oz appricot preserve
4-6 servings prepared rice
1 pkg dry onion soup mix
1/2 c water
1 green pepper chopped into chunks

Place chicken in 9x13 inch pan. Mix together dressing, preserves, soup mix and water, pour over chicken. Cover and bake 1 hour at 350. Add chunked veggies and fruit cook uncovered for 1/2 hour. Serve with rice.
